The 12-cup drip coffee maker is one of the easiest brewers for making coffee for a group and one of the most reliable for everyday use. With a few small tweaks to grind size, coffee amount, and setup, you can turn a standard pot into something clean, balanced, and genuinely worth drinking.

This straightforward recipe delivers a clean and repeatable pot with minimal effort.

What You Need

  • 12-cup drip coffee maker
  • Paper filters (or reusable filter)
  • Coffee: 85 g medium grind (table salt consistency) or 1 tablespoon per cup of brewer
  • Burr grinder
  • Digital scale

Step-by-Step Method

  1. Weigh and grind your coffee. Measure 85 g of coffee and grind to a medium (table salt) consistency. Or use 1 tbsp per cup of coffee.
  2. Prepare the brewer. Place a paper filter in the brew basket. (Paper gives a cleaner cup; reusable gives more body.)
  3. Add the coffee. Add the ground coffee to the filter and gently shake or level the bed for even extraction.
  4. Add water. Fill the reservoir with fresh, filtered water up to the 12-cup line.
  5. Start the brew. Press start. Use the bloom/pause feature if your machine has one; otherwise, run the full cycle.
  6. Finish and serve. When brewing finishes (6–8 minutes), gently swirl the carafe to mix. Serve immediately or keep warm in a thermal carafe.

Why This Recipe Works

A medium grind and proper ratio prevent weak or bitter results, The result is a balanced pot that’s easy to repeat day after day.

Dialing In and Troubleshooting Your Brew

Change only one variable at a time to see its effects. Adjust grind, coffee amount, or filter type as needed. Use the table to guide adjustments.

Desired Outcome / Issue Likely Cause / Adjustment Recommended Fix / Starting Point
Stronger, richer cup Use more coffee or a slightly finer grind 90 g / add a tbls or medium-fine grind
Brighter, cleaner cup Use less coffee or a slightly coarser grind

80 g / remove a tbls or medium-coarse grind

More clarity Use a paper filter + level the grounds Paper filter + even bed
More body Use a reusable filter Reusable gold-tone filter
Sour or under-extracted / Sour or weak Grind too coarse or too little coffee Finer grind or increase to 90 - 95 g / add a tbls
Bitter or over-extracted / Bitter or harsh Grind too fine or too much coffee

Coarser grind or reduce to 80 g / remove a tbls

Uneven extraction / weak spots Uneven grounds bed or dirty machine Level the grounds + clean machine regularly
Coffee too hot / scorched Hot plate left on too long Use a thermal carafe or remove from heat
Weak aroma / flavor Stale coffee or old water Use fresh coffee + filtered water
