What You Need
- Hario Switch, size 02
- Hario V60 paper filters, size 02
- Coffee: 15 g medium grind (table salt consistency)
- Water: 240 g at 204°F (30 seconds off boil)
- Burr grinder
- Gooseneck kettle
- Digital scale
- Stirring utensil
- Timer
- Mug
Step-by-Step Method
- Heat your water. Bring water to 204°F (wait 30 seconds off boil).
- Weigh and grind your coffee. Weigh 15 grams of coffee and grind to a medium (table salt) consistency.
- Prepare the filter. Fold the edges of the filter, place it in the Switch, and set it on a mug. With the valve open, rinse thoroughly with hot water to remove paper taste and preheat the brewer and mug. Discard rinse water and reheat the brewing water as needed.
- Add the coffee. Add the coffee to the filter. Gently shake to level the bed.
- Start the brew. Place the Switch and mug on the scale, tare, start your timer, and pour all 240 grams of water at 204°F in a slow, circular motion.
- Stir. Stir to fully saturate the grounds and break up any clumps.
- Steep. Place a lid on top (optional) and let it steep undisturbed for 3:30 min.
- Drink up. Give the Switch a swirl and open the valve to drain. When the drawdown finishes (1-2 minutes), swirl the coffee in the mug and enjoy.
