The Clever Dripper masterfully combines the best of immersion brewing and pour-over methods. It lets the coffee steep fully like a French press for rich flavor development, then filters cleanly through paper like a traditional drip brewer for excellent clarity. The result is a bright, sweet cup with balanced body and minimal sediment—forgiving enough for consistent great results even if your technique varies slightly.
It's one of my favorite ways to brew at home because of its simplicity, reliability, and delicious outcomes. This recipe follows James Hoffmann's optimized method (from his "Ultimate Clever Dripper Technique" guide), which emphasizes water-first addition for faster, more even drawdown.
What You’ll Need
- Clever Dripper (standard small ~11–14 oz or large ~18 oz)
- #4 cone paper filter
- Freshly roasted coffee (ideally 7–28 days post-roast)
- Burr grinder
- Digital scale
- Gooseneck or pouring kettle
- Timer
- Mug or carafe (preheat with hot water)
Quick Brew Recipe
- Coffee: 18–20g
- Water: 300–340g (~1:16.7–1:17 ratio)
- Water temperature: 200–205°F; off-boil, rest 30–60 seconds
- Grind size: Medium-fine( finer than French press, similar to table salt; adjust finer for more body, coarser for lighter)
- Brew time: 3:30–4:00 (including drawdown)
Step-by-Step Instructions
- Fold the edges of the #4 paper filter slightly (two opposite sides) for a better fit, then place it in the Clever Dripper. Rinse thoroughly with hot water to remove any paper taste and preheat the brewer. Discard the rinse water.
- With the dripper off your mug (valve closed), pour all your hot water (340g) directly into the filter.
- Immediately add your ground coffee (20g) on top of the water.
- Stir vigorously for 10–15 seconds with a spoon to fully saturate the grounds and break up any clumps.
- Steep undisturbed for 2:00.
- At 2:00, gently stir or swirl to break the crust and release any trapped grounds.
- Let settle for 30 seconds (total steep time ~2:30).
- Place the dripper on your preheated mug or carafe to open the valve and start draining. Aim for a drawdown of 45–90 seconds (total brew ~3:15–4:00).
- Give the cup a quick swirl and enjoy the bright, sweet flavors!
Tips For Best Results
- Water-first (then coffee) promotes faster, more even drawdown and reduces clogging—Hoffmann's key insight.
- Preheating everything (brewer, mug) helps maintain temperature for consistent extraction.
- Adjust grind to control strength: finer → longer contact/more body; coarser → quicker/lighter cup.
- For fuller body, extend the initial steep to 2:45 before the final stir/settle.
- Scalable: For the large Clever, try 25–30g coffee to 425–500g water using the same method.
Troubleshooting
- Drawdown too slow (> 2 min) or stalls: Grind coarser, reduce stirring intensity, rinse filter more thoroughly, or clean the valve/seat (remove center piece and check for grounds/debris).
- Drawdown too fast (< 45 sec): Grind finer, or start draining slightly earlier (e.g., after 2:15 total steep).
- Bitter, dry, or astringent finish: Likely over-extracted—try coarser grind, shorter steep (e.g., 1:45–2:00), or slightly lower temp (194–198°F).
- Sour, weak, thin, or under-extracted: Under-extracted—grind finer, extend steep to 2:45–3:00, or increase coffee dose slightly.
- Sediment or muddy cup: Too many fines—use a quality burr grinder, grind coarser, or ensure good settling after the final stir.
- Valve leaks before placing on mug: Clean the silicone gasket and valve seat thoroughly; avoid over-stirring that pushes grounds underneath.
- Inconsistent brews: Change one variable at a time (start with grind). Note that roast level and bean origin affect behavior—lighter roasts often need finer grind/hotter water.
