Clever Dripper Brewing Guide
Posted on March 15 2026,
The Clever Dripper combines the ease of immersion with the clean filtration of pour-over, making it one of the most forgiving and repeatable methods available.
This is my go-to method because it requires little attention and delivers consistently tasty coffee.
What You Need
- Clever Dripper
- #4 cone paper filters (Melitta filters work and are easy to find)
- Coffee: 20 g medium (table salt consistency)
- Water: 320 g at 200°F (45-60 seconds off boil)
- Burr Grinder
- Gooseneck kettle
- Digital scale
- Stirring utensil
- Timer
- Mug
Step-by-Step Method
- Heat your water. Bring water to 200°F (or wait 45-60 seconds off boil).
- Weigh and grind your coffee. Measure 20 g of coffee and grind to a medium (table salt) consistency.
- Prepare the filter. Fold the edges of the filter and place ithe filter in the Clever Dripper, set it on a mug, and rinse with hot water to remove paper taste and preheat the brewer and mug. Discard rinse water and reheat the brewing water as needed.
- Set up to brew. Place the Cleaver Dripper on the scale, add the ground coffee, and tare the scale.
- Start to brew. Start the timer and pour 320 g of water at 200°F slowly in a circular motion over the grounds.
- Stir. Stir to fully saturate the grounds and break up any clumps.
- Steep. Place the lid on top (optional) and let it steep undisturbed for 3:00.
- Drink up. Give the Dripper a little swirl and place the it on your mug to open the valve. When the drawdown finishes (1-2 minutes), swirl the coffee in the mug and enjoy.
Why This Recipe Works
The Clever Dripper uses full immersion for even extraction and a rich body, then releases through a paper filter for clarity. The built-in valve precisely controls steep time without requiring perfect pouring. It blends the ease of immersion with the refinement of pour-over, delivering consistent results with minimal effort.
Dialing In and Troubleshooting Your Brew
Change only one variable at a time to see its effects. Adjust grind, coffee amount, water temperature, or steep time as needed. Use the table to guide adjustments.
| Desired Outcome / Issue | Likely Cause / Adjustment | Recommended Fix / Starting Point |
|---|---|---|
| Stronger, more full-bodied | Finer grind or longer steep | Finer grind or 3:30 steep |
| Lighter, brighter cup | Coarser grind or shorter steep | Coarser grind or 2:30 steep |
| Sour or under-extracted / Sour or weak | Grind too coarse, steep too short, or water too cool | Finer grind, extend steep to 3:30, or raise to 203 °F |
| Bitter or over-extracted / Bitter or harsh | Grind too fine, steep too long, or water too hot | Coarser grind, shorten steep to 2:30, or drop to 197 °F |
| Excessive sediment | Grind too fine | Coarsen grind or switch to paper filter |
| Drawdown too fast | Grind too coarse | Use a finer grind next time |
| Drawdown too slow or clogs | Grind too fine or too much agitation | Coarsen grind or stir less vigorously |
